MiM in Europe: Strategy with 2.5 GPA, 2-year gap, and strong extracurriculars?

As a 25-year-old humanities graduate with a 2.5 GPA from a T1 Indian university and 5 internships, I’m considering an MiM in Europe. Given my background and GMAT score range (650-690), which universities should I target? Should I apply now with my current profile, or wait until I have work experience and a higher GMAT score?

If you have strong extracurriculars, then the 2-year gap shouldn’t hinder you to apply to universities, however you can consider universities with holistic admissions like universities which focus less on GPA and emphasis more on overall profile which includes extracurriculars, work experience and SOP.
